This simple recipe comes together effortlessly and sets in the fridge, making it perfect for meal prepping. Whether you need a post-lunch treat, an afternoon pick-me-up, or a dessert the whole family will love, this guilt-free Snickers slice is sure to hit the spot! Ingredients:
12 medjool dates (pitted)
170g dark chocolate
90g peanut butter
Sprinkle of Himalayan salt

Peanut butter provides a source of healthy fats, protein, and vitamin E, helping to keep you full longer while adding a deliciously creamy texture to any recipe. Plus, it's a great source of magnesium, which plays a key role in energy production and overall well-being.
Method:
Prepare a square tin with baking paper to prevent sticking and ensure easy removal.
Pit the Medjool dates and gently butterfly them by opening them fully without splitting them in half. Set them aside.
Gently melt the dark chocolate using a double boiler or microwave in 30-second intervals, stirring in between until smooth.
Drizzle 2-3 tablespoons of melted chocolate onto the lined tin, spreading it thinly to create a base for the dates to stick to.
Arrange the butterflied dates in four rows of three on top of the chocolate base, pressing them down slightly to flatten.
Spread the peanut butter evenly over the dates - it doesn’t need to be perfect.
Pour the remaining melted chocolate over the peanut butter layer, using the back of a spoon to spread it out evenly.
Sprinkle a light layer of Himalayan salt over the top for the perfect sweet-salty balance.
Place the tin in the fridge until the slice is set.
Once set, cut into your desired portion sizes and enjoy your guilt-free snickers slice!
Keep stored in the fridge for up to 7 days.
My RECIPE TIPS
• For easier slicing and to prevent breakage, cut the slice once the chocolate has just set but is still slightly soft. Around 30 minutes after being placed in the fridge.
