These wholesome banana pancakes are a delicious way for the whole family to start their day, naturally sweet and packed with goodness to keep you energised for the day ahead. Whether you're enjoying them as a cozy Sunday morning ritual or meal-prepping for busy weekdays, they’re the perfect balance of indulgence and nourishment. Make a batch ahead of time, freeze them and have a quick, satisfying breakfast or snack ready for you and your little ones anytime. MAKES | 1 SERVING (6 medium-sized pancakes)
Ingredients:
1 medium banana
1 large egg
1 tsp plain flour
1/4 tsp cinnamon
Olive oil for cooking
Toppings (optional)
Greek yoghurt
Maple syrup
Fruit (berries/peaches/nectarines/mango)

Bananas act as a natural sweetener in pancakes, meaning you can enjoy a deliciously sweet flavour without adding sugar! Plus, they’re rich in potassium, which helps support muscle function and keeps you energised throughout the day.

Method:
In a bowl or jug, mash the peeled banana until mostly-mashed (a few small lumps are fine).
Add the egg and mix until well combined.
Sift in the flour and stir until combined.
Sprinkle in the cinnamon and give the batter a final mix.
Heat a pan over medium-low heat and lightly grease with olive oil.
Pour the batter into the pan, forming medium-sized pancakes (my pan fits about three at a time).
Cook until bubbles begin to form on the surface, then flip and cook the other side until golden brown.
Repeat with the remaining batter.
Enjoy as is, or add your favorite toppings!
My RECIPE TIPS
• Between batches, wipe the pan with a paper towel to remove any leftover batter, ensuring even cooking and golden pancakes every time.
• Turn off the heat between batches and add the batter to the pan while it's still off. This prevents the pan from overheating and burning the pancakes. Once the batter is in, turn the heat back on to complete the cooking process.
• Opt for an olive oil spray to lightly grease the pan, this keeps the pancakes from sticking without making them too oily.
